Mom’s Salsa
I make this all the time and I always ask my Mom to make it when I’m home. It’s super fresh and really good for you. I like mine extra spicy, but you can remove peppers from the recipe and it’s totally tame. It’s also great to add on omelets and baked potatoes for a healthy topping with lots of flavor!
What You Will Need:
1 Can of Black Beans
1 Can of Rotel
1 Bushel of Cilantro
3 large tomatoes
1 Small Green Pepper
1 Small Red Pepper
1 Large Purple Onion
Jalapenos Peppers to Taste
2 Large Limes
1 teaspoon of White Vinegar
Tortilla Chips!
Rinse Black beans well before placing in a large bowl. Add Can of Rotel and finely chopped cilantro (I like to use a lot in this salsa).
Chop the tomatoes, peppers and onion into small chunks (not too small!) and add to mixture.
Add the vinegar and a dash of salt and pepper. Mix well and refrigerate!
Salsa is ready immediately but I find it best after a day or two! The flavors will really mix together overnight.
